Do you use it with a SIM or via a phone hotspot or other wifi?

(My understanding is, you can either fit a SIM or connect to Wifi. I'm
curious about the amount of data used if you opt for the former.)

Also, do you know the difference between the TM7 and the TM7 (Aviation)-
I can't find details on the net.

At the moment it is tethered to the car/phone WIFI but I've been thinking the same regarding getting a cheap data SIM, but don't know how much data it'll use.

You can fit two SIM's in the bottom of my TM8, not sure about the different models. They're all the same though - android phone in a mobile form factor with mic and PTT. The only difference I can see between TM7Aviation and mine is a different type of DC jack on the back. The one on mine is useless, ripped it out and fitted a fly-lead instead.

I see Martin Lynch is wanting £190 !! for them

don't think I paid half that for mine but that's inflation for you.

1p mobile have some deals which a useful for 'infrequent usage' - I
built up credit and they changed the rules so I haven't actually been
charged for ages, they just take a modest sum from the credit.

(I've a couple of their SIMs in low usage IOT type devices.)

I think they use EE. Certainly I've rarely had coverage issues.
